I have a meeting in Siem Reap 2 hours after my plane is due to land at Siem Reap. Is it doable to get through the Cambodian airport/customs and get into town in that time? Coming with an eVisa already sorted and only one small bag each.

Yes, you should be fine. I found customs at the airport reasonably quick (maybe 20 mins or so), and the ride into town isn't that far (maybe 1/2 hour). This is be memory, but I'm sure someone will correct me if my memory is lapsing!
