i want to get a chefs uniform replicated whilst over there any good tailors al a hoi an?

Good enough yes. I never thought that the taylors in Hoi An were that good anyway.
You'll need some time and best to bring your own design or picture. They are less organised and less aimed at tourists so you will not likely find books/magazines with chef's uniforms.
Chef's jackets are also cheap to buy. Having a name or logo sown in is easy. For the latter you should be near Independence Monument on Norodom street.
Tailor you can find everywhere. There are a few on Sihanouk blvd, also near O-Russey market. Language will be the only issue and it's almost mandatory to have a good picture with you.
