    I just asked a buddy of mine who has spent quite a bit of time wandering around the Philippines, and these are his top three favorites:

    Pork Sinagang - sour and tart
    Chicken Abodo - a hearty staple
    Fish Bangos with rice and Mang Tomas sauce - delicious

    Of course there is always Balut, but I think that's more of a practical joke that has gone horribly horribly wrong.

    I second Chicken Adobo (but maybe add a little pork into the mix!)

    You should also try lumpia shanghai if you can - they're absolutely delicious!

    You should try eating at Isdaan Restaurant in Tarlac or Laguna. They offer native Filipino cuisines.

    I second this. My personal favorite is ampalaya (bitter lemon), talong (eggplant mixed with egg ommelette) and rice as a combination though

    I'm a huge fan of Kinilaw, a Philippine style ceviche. And obviously also lechon manok.
