Not to be pedantic, but the plural of Baht is baht.
You should be able to exchange cash on arrival. Pretty sure they're open all night. But to be on the safe side, bring your ATM card and you can draw cash at an ATM.

There are bank money changers available at the airport 24 hours a day, everyday! When you finish with immigration there will be some near the baggage carousel. When you finish with customs (after you pickup your bags) there will be other bank money changers in the arrivals hall.
Remember to bring currency that is not all torn and old or dirty. They can be picky at times. There are ATM's also available. Make sure you first notify your bank that you will be using your card overseas so your withdrawals are not denied. Be aware that there is a 150 baht surcharge for every ATM withdrawal so don't bother with only small amounts.
Travelers checks are also easy to cash, you must show your passport for that. The charge to cash a travelers check is only 33 baht per check, don't waste it on cheap low value checks. Stick with the $100 sizes or higher if you can get them.
When you fly home there will also be bank money changers available to change your baht back to your home currency - 24 hours a day!
Remember to get some small bills for paying taxi drivers, they may claim to not have any change hoping you will say keep the change!
Good luck.
