So I am planning on heading to Thailand, Cambodia, and Vietnam.

I haven't booked anything yet, and I've never been to any of the three countries, so any advice would be appreciated!
Start- Fly into Bangkok Oct 19, spend a few days doing nothing.
fly from bangkok to Ho Chi Minh
spending a few days in that area (hopefully seeing a few towns along the Mekong)
Heading down to Can tho and Chau Doc (I'm thinking of 6 or 7 days total in Vietnam), crossing into Cambodia for 8 to ten days, seeing Phnom Penh , then on to Siem Riep .
Heading Back to Phnom Penh to fly back to Bangkok.
Then flying down to Phuket for a week, ending the trip back In Bangkok.
In total we will have 32 days for our trip. Is it enough time to do all the things I have listed? I don't want to be too pressed for time.
We have the option of flying instead of travelling over land between Vietnam and Cambodia, would that be a better (albeit less interesting) option?
Based on what i've read on travelfish, it sounds like the visa process for Vietnam and Cambodia should be easy, but is there anything that needs to be done ahead?
How difficult is it to travel from Vietnam to Phnom Penh over land? Does anybody have a time estimation?
Is this a good division of our time?
I really appreciate any advice or opinions

For the things you have listed, 32 days should be well enough to do what you want.
Most of the time I suggest to people to do only 1 country and do the next one another time if you only have 1 month but since you're not really planning to do everything it sounds pretty good.
the bus trip from Ho Chi Minh to Phnom Penh takes about 8 hours, not that long so you don't really have to fly (if you fly, you'll be in the airport for about 2 hours, fly for half an hour, then waiting in PP to pick up your luggage and visa check-ins, you'll be spending at least 6 h at the airports so It might be a good choice to go by bus as it's a good scenery as well).
8-to 10 days in Cambodia should be well enough to do what you want. Bus from PP to Siem Reap is about 5-6 h, depending on the weather.
Maybe try to find a flight from Phnom Penh to Phuket (I'm not sure if there is one, but always good to check it out so you don't have to go trough BKK anymore, just been looking for it but can't really find any so you'll probably have to go to BKK first).
Just arrange your visa's for the next country while you're there.

8 days is definitely enough to do what you want in Cambodia. Personally, I don't think you even need that long but overall it doesn't sound like a rushed itinerary so all OK there. You do need to arrange your Vietnamese visa before arrival - whether it be getting a visa sorted in your own country or arranging a visa on arrival. You can't just show up at the border like you can in Cambodia and Thailand.
