Hey there,
We are keen to travel back to Europe with a bycicle, starting in Bangkok from Central Asia to Eastern Europe. Does somebody know good bike shops in Bangkok for preparing all our specific desires to have a propper one for this long distance?

I don't know how easy it is to get touring bicycles in Thailand.
The following brands that manufacture touring bicycles and have a distributor in Thailand are:
Trek: Distributed by probike (mentioned by Captain Bob)

I am not sure if Cannondale still manufactures a touring bicycle but you can check with their dealer:

Now if you need an expedition bicycle.....
