Do you have to pay a departure tax when flying out of Thailand? And if so. how much?

Can't remember the amount, but it's usually built into the ticket price.

According to Suvarnabhumi's website:
Suvarnabhumi International Airport Departure Tax (Bangkok International Airport Departure Tax) = 700 Baht
Since February 1, 2007 the 700 Baht international departure tax was included in the price of flight tickets.

Since 2007 or so, departure taxes from Thai airport are included in the cost of your ticket.
Remember this is *not* the case in Cambodia, Indonesia, Philippines, etc. and you still have to pay departure tax in cash.

Yeah, they use to charge 500bt but not any more, so it must be in your ticket already.
be aware tho that thailand has a 500bt overstay fee per day, for each day you are over your visa. with one day of grace given free.
