Hiya!! I'm off to Thailand in January for 18 day for the first time. I know I wanna spend a few days in Bangkok, travel up to chaingmai and then down for the beaches, but Iv got not specific itinerary in mind.

What are things I should really see/do??
I'm really into seeing different cultures and not just the touristy areas.

And also I'm looking for some cool/quirky accommodation, jungle huts or beach huts anything that's abit different.

Any suggestions or ideas would be lovely!!

Go to Khao Sok. They have great jungle huts and there is some good trekking there.

As for beaches, the beaches in Ranong province are much less visited and may suit you as well as the ones really far south in Trang and Satun. These are much less travelled then the usual Phuket, Krabi, Phi Phi, Samui, Phangan and Koh Tao route that most people take.

I'll have to agree with guava_girl on this - :) Get off the tourist trap route!
