Soppong Vs. Mae Hong Son?

I'm taking the MHS loop by motorcycle, and just got into Cave Lodge in Soppong. It's awesome...and it's making me want to stay an extra day to see caves and do kayaking (more than I can fit in a day).
My original schedule:
One full day in Soppong, leaving early morning for MHS (1 day in Soppong)
The rest of 'day two' in MHS, then two more full days (3 days in MHS)
I'm going to Mae Hong Son for the photo opportunities of hill tribes, but really just for photography in general (monks, maybe a local temple or two, landscapes, etc). I have no idea where to start, so I figured I would need three days to feel it out.
For those that have been to both, should I stick with 1/3 or switch to 2/2?

Too late for your trip, but in case others read this, I'd recommend MHS if you're into people. I met a lot of decent locals and visitors there alike, and it's got a bit of a nightlife - just walk around the marketplace, have a curry, also there's a Crossroads bar with a good mix of tourists/expats/and locals. Both places have good countryside to explore, right along the Siam-Burmese border.
