cooking schools during songkran in chiang mai

I'm coming to Chiang Mai for Songkran, and hoping to book a one or two day cooking class in the city. I know they are tourist traps, only offer a superficial understanding of Thai cuisine, and could be best done experimenting alone in the kitchen.... However, I want to do it! I'm interested in learning to make a good curry paste and cooking with fresh ingredients.
Can anyone recommend a program that can prebooked ? I figured things would be fully booked soon...

You can't prebook a cooking course, but don't worry there is always an opening even during Songkran. Just be prepared for flying buckets of water as you head out to the market.
