I just returned from a 3 week trip to this awesome country and came across a local canadian who operates a hotel/resturant in Hau Hin. About three hours south of bangkok on the gulf of thailand.
The owner Neil and his staff were awesome. Very friendly and helpful. He even took is time to become a tour guide.
Accomdations were great, meals and drinks very resonable cost. This location is only a 5 minut walk to the beach.
Had a great time there, with the staff and owner. I would highly recommend this place.

Hua Hin is generally a package tour holiday resort and not the most interesting place in thailand (yes, I know they have nice and free jazz festival every June) - and there are hundreds guesthouses all over.
If I would stay in Hua Hin I would choose those guesthouses in the stilts above the sea, near the pier - maybe they are a little more expensive than the ordinary ones, but they are different.
