do you think it'll be o.k. to show up in bangkok december 13th-january 5th without booking any hotels? we'll probably leave bangkok for chiang mai, depending on the state of it all. is it hard to find good places to stay during this peek season by walk-in only?

It is possible to find a place to stay in the peak season but it might take abit more walking around to find somewhere.
At the end of the day its pretty easy to book online but if you think you want to spend sometime looking for a hotel, go for it!

As long as you're flexible and don't mind trying a few places before you find a room, no real need to book in advance.

A lot of the cheaper places don't take advance bookings anyway. Unless you have your heart set on a specific place, don't worry about making a booking. Just try to choose an area with a lot of guesthouses so you have lots of options.
