as we only want to stay a couple of nights inlcuding the night of the full moon party can anyone suggest somewhere to stay that doesnt require us to stay a mimimum amount of nights?

If you want to book online beforehand, pretty much everywhere that can be booked online requires a longer stay. See this story for more tips and tricks in this regard, and there's a list of accommodation that can be booked online at the end of the story.
Do I need a reservation for the Full Moon Party
If you want to avoid the longstay requirement, then get to the island early and find something, but you them effectively end up long staying anyway -- see the above story for more info.
