Our plan is to take a morning ride to Ayuthaya, explore the wats and hop onto the sleeper train on to Chaing Mai.
The questions is what should we do with our luggage while visiting the temples (probably on the bike).

There are left luggage facilities at the train station. Or, if you want to be able to grab a shower etc before grabbing the train, consider getting a room at one of the cheaper guesthouses in town -- they may do a room for you on a day rate.

I think renting a day room is a great idea too. We've done so in Ayutthaya and dozens of other places all over the world. As somtam says, you get a place to leave your luggage as well as a place to take a nap and grab a shower. Sometimes you can get the cheaper day rate, but even if you don't the regular cost of a room in a less expensive place is still worth it. Regards.
