I have a multiple entry visa for Vietnam. I am going to Cambodia for a few days. Can anyone tell me what documentation I would require to enter and leave Cambodia -- passport photos etc?

Always take passport photos while you travel, they can come in handy.
I assume you will be going from Saigon(ho chi minh) to Phnom Penh. Best to arrange your visa in Saigon before you leave for the border. I'm not sure if you can get visa on arrival there and it will save you time if you do it before anyway. You can hand it over to some small travel agencies in Saigon and let them arrange it for you or just go to the Cambodian embassy in Saigon.
The border between Laos and Cambodia has visa on arrival but I don't think you'll be going this way.

I have recently traveled from Saigon to Phnom Penh and the visa can be arranged at the border easily. If you go by bus the tour company will help make the visas when you arrive at Cambodia. Just make sure that your visa is a valid multiple entry (i.e. that it is not a renewed multiple entry visa- these can become single entry if renewed in Vietnam).
