Could you please take a look at my itinerary and let me know if it's too much to do in 25 days? We are using airline miles and the closest we could get to Cambodia/Vietnam was Beijing and since we have to pay for the visa anyway, we decided to include it in the trip.
June 16: Arrive Beijing at 10:30pm
July 17: Beijing/Phnom Penh
July 18: Phnom Penh
July 19: Phnom Penh/Siem Reap
July 20: Angkor Wat
July 21: Angkor Wat
July 22: Siem Reap/Phnom Penh
July 23: Phnom Penh
July 26: Mekong Delta
July 27: Phnom Penh/Saigon
July 28: Saigon (all day)/Hoi An (overnight train)
July 29: Hoi An
July 30: Hoi An/ Hue
July 31: Hue
Aug1: Hue (all day) /Ninh Binh (overnight train)
Aug 2: Ninh Binh
Aug 3: Ninh Binh/Hanoi/ Sapa (overnight train to Sapa)
Aug 4: Sapa
Aug 5: Sapa (all day)/Hanoi (overnight train)
Aug 6: Hanoi-Halong Bay
Aug 7: Halong Bay-Hanoi

Why don't you take flight from Siem Reap to Saigon. Or you arrive Siem Reap first and then to Phnom Penh and take speed boat from Phnom Penh to Chau Doc - Sai Gon. By this way you can save a domestic flight back Phnom Penh. The itinerary in Vietnam seems ok.

Leave China for another trip, even if you have to pay for the visa.
Give Cambodia two weeks and include Kampot/Kep and Sihanoukville and perhaps consider another day at the temples (3 seems to be the minimum people recommend).
Just concentrate on Northern Vietnam, flying from Saigon (don't spend any time here) up to Hanoi. This will give you more relaxation time in Hanoi, which is advisable. Come back another time for Hue, Hoi An, Saigon etc. As it is, one of your days consists of Ninh Binh/Hanoi/ Sapa, which I think you'll agree is in nobody's interests.
Therefore, do something like roughly:
2 weeks - Cambodia;
11 days - Northern Vietnam.
Obviously this is an approximation but I think it is better than what you propose.
