We will have six and a half days in HCMC, seven nights, in early July, rainy season. Can't change tickets to fly out of Hanoi and go up the coast so are looking at best itineraries in the general area. We've thought of two days or so in the Mekong Delta, two days in the city itself, leaving a day for Chi Chi tunnels and an extra, but wonder if there are better alternatives. We're trying to avoid burning two days travelling to and from somewhere. Suggestions welcome....!
You'd need two full days to be able to see much of what Saigon has to offer. It has a lot of museums worth seeing, and there's only so many museums one can stomach in a day. We recently ran a story on Saigon's top 10 cafes -- a handy way to space out the museums.
Once you're done with Saigon, a two day trip into the Delta would work, but three days would be better. If you're doing it solo, I'd suggest heading straight to Can Tho, which has the best floating markets for one night, then a second night in a homestay in Vinh Long , but otherwise look at doing a tour which will roll a lot more into the two days.
A day tour to Cu Chi is best combined with a trip to the Cao Dai temple -- tours ex Saigon go for US$2 per person and take most of the day.

take bicycle trip in Hochiminh city is nice idea, you can rent the bike very easy in Ho Chi Minh, around $2/day.
