Value tours for a family of 5

    So I have booked all our flights for our December/January trip and am now thinking about our accommodation and a few interesting tours. Family of Mum, Dad, 17, 16 and 11 y.o. daughters. Siem reap, Hanoi, Ha Long, Hoi An, Nha Trang, Saigon, Can Tho, Phu Quoc.
    In the way of tours....love the look of motor bike foodie tours of Saigon for example but looking for better value than $50-$100 per person considering I'll be forking out x 5. Looking for bike tours, motorbike tours, food trails, boat trips etc.
    Already doing a 3 day from Saigon-An Binh Island-Can Tho on bike.

    Does anyone have any ideas and suggestions/recommendations for interesting tours that are good value for money for our family in any or all of these places?
    Am I better to wait till we are there and arrange it then?
    Or speak to a VN agent and organise them before we leave home?
