Hi.
We'll be heading to Ho Chi Minh from Bangkok in early January. I can only see two airlines that fly this route: Thai Airways ($400 usd+) and Vietnam Airways (whose website is pretty useless for booking and finding prices.)
Am I missing any other airlines that service these cities?

Try Air Asia.
We booked a flight with them from Bangkok to Hanoi in late November for around $80 US each.
I've been told that they are a budget carrier, and I'm sure that if they fly to Hanoi they'll probably fly to HCM as well.

Bangkok Airways fly it, but currently AirAsia doesn't -- I think they're planing on adding it soon though.
Some have reported going to Ho Chi Minh City via Singapore with the budget carriers (eg Tiger or Jetstar) -- that can work out a little cheaper... but it's certainly the long way to HCM!
We've got the full list of international carriers flying into Vietnam here (not all fly from Bangkok though)

Oh that would be great if Air Asia added it soon. I noticed it flies to Hanoi, but not HCM>
Perhaps I'll hold off a bit on booking these flights. Thanks also for the tip on flying through Singapore...sounds a bit complicated just to save a few bucks!

Just curious...does $316usd (+ tax) sound like a fair price for Bangkok to Ho Chi Minh (return.) This would be on Banckok Air.

Checkout Pacific Airlines, they are VietNam's discount carrier.
At the moment they are code sharing this route until their new aircraft arrive.
They are the cheapest of all carriers operating the SGN BKK route.

and here's another vote for Traveller2000.com.
I'd not heard of AirNinja, and would suggest some caution with their routes... they've got Nok Air flying from Chiang Mai to Pailin -- which is no doubt news to Nok Air, and also news to Pailin given it doesn't have an airport!
