There are two or three groups offering both short and long haul bike trips in the back country around Hoi An. The Sleepy Gecko bar and the Light House offer custom tours of various lengths through the adjacent islands of Cam Kim etc. These tours can last from a couple of hours to all day and prices vary depending on length of tour and which company you pick.
But... some of the back country is amazingly beautiful and there are some spectacular Monkey (bamboo) bridges in the area that are a thrill ride just to cross over. So remember that there is much to the Hoi An area other than Old Town. You will have a ball.

There are a couple of D.I.Y ones on the Travelfish Hoi An blog that are worth doing, especially the one that goes through the river coconut palms off the Cua Dai Rd, didn't see another tourist!
