Can anyone recommend a full-day cooking course in HCMC or around? (will travel, for example, to Vung Tau, Mekong Delta region for the right one)
We're looking for a full day, or maybe even several days.

The only one I know of offhand is at the Bi Bee Saigon Hotels in the Pham Ngu Lao. I can vouch for the quality of the food - excellent. I did not take the course, but was rather a hotel guest. The food was much better than the rooms. Google for their website - they will answer your email. You should head further north - Hoi An is the ultimate destination for cooking schools, and it's an excellent beach resort destination (fly into Danang).
