I've spent Christmas in Hanoi and New Years in Sapa in the past. The former was a pretty colourful affair, including midnight markets out front of the cathedral for midnight mass. Sapa was freezing cold, so a bunch of us bundled into a cafe and had a small party.
Depends on your interests really -- if you're looking for a Mid Night Out, Saigon could be just what the doctor ordered, with Nha Trang offering a more foreigner-focussed style party.
