i'm about to send my travel visa application to the consulate in washington d.c.
section #10 on the application form asks where i will be staying during my stay in vietnam.
well, i don't really know yet. i fly into hanoi and will be crossing into cambodia a month later.
i don't want to make any hotel reservations until i get to vietnam, should i leave section #10 of the visa application blank?

You could probably leave it blank without problems, but I usually avoid having to do that by writing any old hotel name down (even if you don't intend to stay there). That way they'll have some info - that's all they care about. If you're flying into HCMC, Thai Nhi Mini Guesthouse is a good place. If it's Hanoi, I like Phu Hoa Guesthouse. You can find their addresses here on Travelfish.
Good luck

Or I would just write "HOTELS" rather than leaving it blank.

At the immigration card distributed at the plane or upon arrival, they won't accept that space blank, you have to indicate which address you are going to stay, so you have to write something in there.

You don't have to put the address you are staying at. If you're there on business, you can just list the name of the company you're working with.
