Hi Lisa:
First, let me say that whatever plan you come up with will be amazing.
Beyond that, why don't you give an idea as to your preferences and desires regarding budget and types of activities? You'll have to temper that with the knowledge that whatever responses you get here will be shaped by the personal experiences and preferences of the person(s) responding.
Keep in mind a couple of things about travel in SE Asia:
* Logistics rule. Getting from one place to another takes more time than is likely the case with wherever you live. You may want to go 300km in a day, but find that you have to spend the night somewhere in the middle, in order to make that work.
* How rushed or how relaxed do you want to be? 2 nights = 1 day in any given place (optimistically).
* Three countries in three weeks is a lot to take on, and likely won't do any of the countries justice. Consider narrowing your focus, and plan to come back in a year or two (or three).
Happy travels!

Thinks about Sapa, Hue, and Hoi An. Dont miss Angkor Wat in Cambodia!
