Hi,
We are doing this trip in April, and we are flying a couple of legs to save time. (Hanoi - Phu Quoc)(PQ - HCMC). After reading the old posts about travel to Cambodia via Mekong Delta, Im thinking I should leave three days for this, instead of two. Any advice on what you would change. (one less day in Sapa maybe?) Any comments you have would be helpful. Thanks!

30th – Arr hanoi 3.30pm
1 day Hanoi
3 day Halong Bay
4 days Sapa
2 days Hanoi (fly to PQ next morning)
4 Days Phu Quoc (fly back to Saigon)
3 Days Saigon
2 days Mekong Delta – Phnom Pehn
1 day PP – SR
3 days SR plus half day before flying out..

Your itinerary is sound good. You travel in special period and it is quite important vacation in Vietnam. It is better to book services in advance.
I advise you to travel as below:
30th – Arr hanoi 3.30pm
1 day Hanoi city tour
3 day Hanoi - Halong Bay stay one night on the boat
4 days Halong bay - Hanoi - night train to LaoCai ( Sapa )
5 days Lao Cai - Sapa visit
6 Days Sapa visit and night train back to Hanoi
7 Days Hanoi arrival flight to Saigon
8 days Saigon city tour
9 day Saigon free day
10 days Saigon Phu Quoc flight
11 days Phu Quoc relax
12 days: Phu Quoc relax
13 days: Phu Quoc relax
14 days: Phu Quoc - Rachgia by spreed boat - Mekong delta ( Chau doc)
15 days: Chau Doc phnompenh
16 days: Phnompenh visit
17 days: Phnompenh - Siemriep by boat/bus/private car
18 days: Siemriep
19 dsya: Siemriep
20 days: Departure
