Hi,
we are planning on going to Thailand at the end of a 6 month trip starting in Novemeber - we'll be arriving by train from Malaysia so have established we will need a visa as we are planning on staying for more than 15 days. But apparently they are only valid for 3 months after application which means we can't apply for them here before we leave. Is it possible to sort them out whilst in singapore/Malaysia before we enter Thailand and if so is it relatively easy to do this? If not what would be the best thing to do???

The list of Thai embassies, worldwide is here. Any one should be able to assist. The KL office also has an email address so that you can enquire before you leave.
There's embassies in Singapore and Kuala Lumpur and consulates in Penang and Kota Bharu -- all can issue tourist visas, in some cases there is same day service.
