Double-Entry Visa (Vietnam) - Experience with port of entry/date

Okay - my question is not if I will need one, I know that. I'm wondering what experience people have had with using them. I'm planning a trip this February flying into HCM City and then going into Cambodia, I'll come back to Vietnam to fly back home. I've heard you have to give an intended port of entry on the double entry, but that is where things get a little sticky for me. I don't know if we'd be coming back into Vietnam at Kaam Samnor/Ving Xuong, Phnom Den/Tinh Bien or even back at Bavet ...

It seems Bac Ha gets pretty over run with tourists so just wondering if Can Cau may be a better option on the Saturday instead? There are two or three groups offering both short and long haul bike trips in the back country around Hoi An. The Sleepy Gecko bar and the Light House offer custom tours of various lengths through the adjacent islands of Cam Kim etc. These tours can last from a couple of hours to all day and prices vary depending on length of tour and which company you pick. Hi I understand that while 1 January is a public holiday in Vietnam many services still operate. Does this mean that normal bus services remain unaffected? I will be travelling in the Mekong Delta in December just before the New Year. I originally planned to travel by bus to HCMC on 31 December for 2 days before getting a flight to Con Dao Islands on 2 January.
