Kashmir
A million ways with mutton
What we say:
The real Kashmir may be off-limits to most travellers, but you can experience the region's distinctive cuisine at this midrange restaurant in Little India.
There's a selection of vegetarian, chicken and fish dishes, but mutton is the star and gets a dozen unique preparations like being slowly boiled in milk, stewed in spiced gravy, roasted in the tandoor, and minced into meatballs. Staff will eagerly describe each dish and it's worth asking for recommendations. The second outlet on East Coast Road has a good value lunch buffet, but is quite out of the way.
