Ayam penyet (literally "smashed chicken") is an Indonesian dish that's also popular in Singapore. Quite possibly the best place to try it is no-frills Ayam Penyet Ria, which keeps the prices low despite its location on a prime slice of Orchard Road.
The chicken is literally smashed with a kitchen mallet after being fried, a technique that apparently renders it tenderer and easier to eat. Served on a banana leaf with sides of rice, steamed veggies, fried tofu, tempeh and an incredibly spicy sambal (a paste made from chilli, tomato, garlic and shrimp paste), this is some of the best fried chicken you'll ever eat. Classic and boneless versions are available, each for S$7.90 a plate.
Other meats that receive the "penyet" treatment include beef steak, catfish, squid, soft shell crab and prawns. The menu also offers Indonesian favourites like bakso (beef ball soup), otak otak (fish cakes) and gado gado (a salad-like creation of cucumber, bean sprouts, hard-boiled egg and potato). The latter is not only very flavourful but also helps to cool the heat of the sambal.
Aram Penyet is always busy, but expect a wait if arriving on a Sunday when Indonesian migrant workers take advantage of their day off by enjoying some of the best and most authentic Indonesian food in the city.
