Walkable beach destination in May

Hi, I'm doing a last minute 1-week trip, and I'm hoping to find an island that is in order of priority:

-Walkable, or has walkable parts
-not too touristy but has outdoor activities
-has decent beaches/scenery
-not a long journey to get to(super long boat transfers)

Really liked Koh Yao Noi but wished the beaches were a bit better.

Koh Jum has great, long expanses of very nice beach along its west coast, and super views/sunsets. It is anything but touristy. There are some nice villages to visit and some decent hiking. Not sure how the weather will be in May, though, and even though it's about 1 1/2 - 2 hours to get there from Krabi, you'd probably only be able to manage 3-4 full days there if you only have a week and are arriving in Bangkok. It probably checks off most your boxes.

You could also try the area around Ao Manao south of Prachuap Khiri Khan. It's not an island, but it is only 5 hours south of Bangkok by train or minivan. You can walk to the water from the train station. Prachuap KK remains a nice, quiet town, and Ao Manao remains very undeveloped thanks to its proximity to the military base. It is a great walking beach.

Koh Phangan and Koh Tao off the southern east coast fit your wishes except that they are touristy. Both are walkable and little need for shoes as you can walk along the beach from top to bottom.
