Hi, That sounds great! I haven't done a cooking class but I cook Thai food every week here in England with my wife. We use only THAI ingredients that you would use in Thailand, we get them from the asian supermarket. The fried bannana sounds fun to make! Bet it tastes sweet with honey. :)
The green paste curry you speak of is probably Thai Green Curry - One of my fav's (actually made it last night). Another one of my fav's is 'Pad Grapao Moo' (Fried Pork with Thai basil)
