Hey guys just wondering what is the BEST route if we are flying into ho chi minh city and want to cover vietnam, cambodia and laos?
Is it better to start of in cambodia or vietnam? is it easy to travel up north through vietnam?
What's your favourite out of the three? thanks!

Much will depend on the time of year as the weather may come into play. Here's a sample itinerary for Vietnam which may be a useful starting point and there are other itineraries in that part of the site.
Vietnam is easy to travel in -- both train and bus easy and affordable.
Weather aside, if starting in Saigon, I'd head north through Vn to Hanoi then overland into Laos via the crossing near Dien Bien Phu to Muang Khua then south via Luang Prabang via Laos' panhandle to Cambodia and explore there. That's a very common route.

I'm going to just second what Somtam has said - though it also depends on how much time you have. You'll have to enter Vietnam twice anyway (if return via Saigon). The benefit of the counter-clockwise direction IMO is that you do a lot of hiking and mountain time in the middle of the trip and then end up on the Cambodian coast with entrance into the Mekong Delta at the end. Close proximity for a ferry ride over to Phu Quoc island to end your trip with a few nights on a tropical island before returning through the Delta up to Saigon.
