What (and where) to eat in Vietnam?

I will start my trip to Indochina soon, can anyone please tell me which foods that I should not miss in Vietnam and where are the best places to eat them?

It would help if you told us exactly where you're headed in Vietnam. I personally like the seafood here - especially shrimp.

I'll be staying at Saigon, Con Dao Islands, Danang and Hoi An, then Hanoi and Halong Bay
Any recommendations for seafood?

In Hanoi, you should not miss Pho (Vietnamese noodle soup), Banh Mi (Vietnamese sandwich), Bun Cha, spring roll, etc.

You should not miss the Pho Vietnamese noodle soup in Hanoi and I recommend you to eat 3 seafoods (1. Grill fish Vietnamese style. 2. Clamspwith lemon grass in hot pot. 3. Fried chicken wings in fish sauce.)

Looks like you're gonna enjoy your Indochina trip, asill73. A trip report when getting back would be fantastic!
Also are you traveling independently or with a tour company? Would love to hear from you as I'm planning a trip to these three countries too.

VIetnam has a lot of traditional foods.
You should try Pho and Stewed sweet herbal chicken soup in Hanoi.
Banh Xeo and Bun Bo Hue in Hue
Com Tam and Sweet-sour sauce prawns.

BBQ garden in saigon. Try the cheese wrapped in beef. I still think of this dish. It's an outdoor seating place. Not the cheapest but not expensive either

Thank you everyone. Me and my friends are now in Hanoi and about to fly to Luang Prabang soon. Just want to let you know that lots of advice here were taken. I particularly liked pho and bun cha in Hanoi, hu tieu in Saigon, seafood in Con Dao was also very nice. But the place I enjoyed eating the most in Vietnam was Hoi An , with cao lau and the chicken rice. We later ate them again in Hanoi, at Comga Hoi An at Cua Dong Street, also very nice.
Looking forward to Laos and Cambodia!

I've lived here for over a year so here is what i think you should not miss:

Saigon: Best Bahn Mi - "Bahn Mi Hanoi", eat tiny periwinkles using a hairpin, and try "Com Tam & Pho" from the street. Also try softshell crab if you can find it :)

Con Dao - seafood. Try urchin, grilled squid, scallops, etc.

Hoi An - CAU LAU & a tiny mussel and cracker dish, these two are not to be missed! Also try the bbq pork ginger skeweres

Da Nang - Mi Quang, Bun Bo Hue

Hanoi - the fresh brew beer for only 5,000VND a glass

My travel agent in Hanoi, Mr. Diep Tran, is a real seafood gourmet. I've eaten both at his home and at wonderful seafood restaurants and upscale buffets with him and his crew in Hanoi. You might ask him for help - click here for his site and contact details.

There are many delicious food in Vietnam! You should try street food like Bun Cha, Nem Ran in Hanoi and Banh my in Saigon ;)

I'm local so I think you should be tried:

In Hanoi

- Pho Bo (Beef Noodle Soup): You should be eat on morning (8-9 AM) at No10 Ly Quoc Su Street.
- Bun Cha: eat for lunch at Hang Hanh street

- Street coffe and street food for dinner at Cau Go and Ma May street
- Bia Hoi at Ta Hien street for night :)

In Da Nang - Hoi An
- Sea Food - wow amazing
- Banh Mi at Hoi An Market
- Cao Lau

Ho Chi Minh city and Mekong Delta
- Fresh Fruit

hey, apart from the excellent previous choices, i like any of the roll-your-own' dishes... and a great place for trying a variety of street-foods in saigon is the Nhà Hàng Ngon restaurant...
